This is a little different “Meatless Monday.” I bought a box of Fantastic World Foods Nature’s Burger from VitaCost. Basically, it’s a package mix to create a meatless burger!

It was a easy mix to prepare and cook. It only took about 15 minutes as I skipped the step to let the mixture stand for 15 minutes! ;) The Fantastic Burgers were very tasty for a box mix and healthy as it is made with garden vegetables, whole grains, soy, spices. Low in fat and high in fiber is a plus!

Meatless Mondays is a weekly feature which will showcase some of my hits and probably misses with living a meatless life. Many of you know I stopped eating meat about a year ago for personal reasons. While, I haven’t had any desire to go back to eating meat, it has been a struggle to find healthy foods to eat.

Everywhere you go, meat is the main dish. Since I was new to this lifestyle, it led me to eating unhealthy options. I’m on a path now to cook healthier options at home without meat. While going meatless is a personal choice for me, you can still save money by having one meatless meal a week.

Easy Taco Rice Recipe

This is a easy recipe for a quick Mexican side dish.

Taco Rice

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Serve with your favorite Mexican dish or add ground beef or soy crumbles for a complete meal.

Ingredients

  • 1.5 cups water
  • 8 oz tomato sauce
  • 2 tablespoons Taco Seasoning
  • 1.5 instant white rice
  • 1 cup shredded cheese (cheddar, colby jack, or mexican)

Instructions

  1. Bring tomato sauce, water, and taco seasoning to a boil.
  2. Remove from heat.
  3. Add rice.
  4. Cover and let sit for about 5 minutes.
  5. Stir in the cheese.

Thanks to my mother in law, Karen, for helping us with this delicious potato soup recipe! My husband hates onions so we add carrots and celery so it isn’t just potatoes floating in milk! :) This is a household favorite.

Meatless Monday: Cheesy Potato Soup

Prep Time: 30 minutes

Cook Time: 6 hours

Ingredients

  • 8-10 potatoes, cut, boiled, and drained
  • 1-2 stalks celery, chopped finely
  • 5-6 baby carrots, chopped finely
  • 1 tablespoon onion powder
  • skim milk
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Combine the potatoes, celery, carrots, and onion powder in your slow cooker.
  2. Add milk until the potatoes are completely covered. Then add a bit more more milk.
  3. Cook on low for 4-5 hours.
  4. Add sharp cheddar cheese.
  5. Cook for an additional 30 minutes.

Grissini Breadsticks Recipe

Grissini breadsticks are pencil thin breadsticks often served as a appetizer or with wine tasting. I simplified by using a sheet of refrigerated pizza dough and served with a spaghetti dinner.

Grissini Breadsticks

Prep Time: 15 minutes

Cook Time: 5 minutes

Total Time: 20 minutes

Add poppyseed, rosemary, or thyme for additional flavoring.

Ingredients

  • 1 can refrigerated pizza dough
  • 2 tablespoons olive oil
  • 1/3 cup Romano cheese, finely grated
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 teaspoon kosher salt
  • Cooking spray

Instructions

  1. Preheat oven to 425 degrees.
  2. Unroll dough onto a rectangle lightly floured surface.
  3. Roll dough into rectangle.
  4. Brush dough evenly with around a tablespoon of olive olive.
  5. Combine cheese, pepper, and salt.
  6. Sprinkle half of the mixture on the top of dressing, pressing gently into the dough so it will stick. Turn dough over and repeat.
  7. Cut the dough into about 48 thin strips with a pizza cutter. I lost patience and only had about 20 strips.
  8. Place strips on greased baking pan.
  9. Bake for around 4 minutes at 425 or until crisp.

Trying to eat only items from the refrigerator and freezer made it a little challenging one evening! However, we had a little left over alfredo sauce, plenty of mozzarella cheese, tomatoes, and onions. I decided to try out some toasted subs since they were also very customizable, which works great for my picky family.

Whatever Toasted Subs

Rating: 41

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Whatever means put whatever leftover vegetables on your sub!

Ingredients

  • Mozzarella Cheese
  • Tomatoes, sliced
  • Onions, finely chopped
  • Alfredo Sauce
  • Sub Buns
  • Romano or Parmesan Cheese, shredded

Instructions

  1. Layer mozzarella cheese, tomatoes, onions on a sub bun.
  2. Spread a little alfredo sauce on the sub.
  3. Top with Romano cheese.
  4. Bake in oven at 350 degrees until cheese is melted and top of bun is toasted.

Slow Cooker Steel-Cut Oatmeal Recipe

If you are a looking for a easy and delicious slow cooker oatmeal recipe, this one is the one for you. Easily customizable to fit everyone in your household’s oatmeal tastes. I used Bob’s Red Mill Steel Cut Oats Slow Cooker Steel Cut Oatmeal Recipe. Do not try to use quick oats or any other kind of oats. Only steel cut will work for a slow cooker recipe. Believe me, I tried it before! Purchase from Amazon or via VitaCost ($10 off $10 coupon).

Not only is this delicious, steel-cut oats are much healthier. Rolled oats are produced by mashing the oat groat into a thin sheet, which breaks down the fiber. Steel-cut oats are simply cut into two or three pieces. Thus, they take longer to digest than rolled oats because they are more complex and have less factory processing.

Steel Cut Oats Slow Cooker Steel Cut Oatmeal Recipe

This is perfect for a family oatmeal bar! Have many of toppings and flavorings on hand. Blueberries, strawberries, brown sugar, maple syrup, walnuts, raisins, flaxseed, and cinnamon are just a few ideas!

Ingredients

  • 1 cup steel cut oats
  • 2 cups of water
  • 2 cups of milk
  • 1/4 teaspoon sea salt
  • Toppings per taste - ie, brown sugar, maple sugar, agave syrup, raisins, blueberries, walnuts, apples etc.

Instructions

  1. Combine steel cut oats, water, and sea salt in slow cooker.
  2. Cook overnight or for around 8 hours on low.
  3. In the morning you may need to add a little milk if it is too thick.
  4. Add flavoring in the morning. I added 1/4 cup of brown sugar and 1/4 cup of maple sugar to make my son's favorite flavor. I added walnuts and blueberries to mine.

I used 2 cups milk and 2 cups water. You could do 4 cups of water or a 4 cups of milk depending on how you like your oatmeal.

Meatless Monday: Black Bean Cheesy Enchiladas

Total Time: 40 minutes

Add chicken or ground beef to "meat it up."

Ingredients

Instructions

  1. Simmer tomato sauce, seasonings, and water for about 5 minutes.
  2. Combine the black bean flour and cook for an additional minute.
  3. Then add the pinto beans, black beans, and the hot sauce and cook for several more minutes.
  4. Place a little sauce in the bottom of your 9" x 13" baking dish.
  5. Layer 3-4 tortillas and top with cheese.
  6. Repeat sauce, cheese, and tortilla layers until the pan is full.
  7. Top with additional cheese on top.
  8. Bake at 400 degrees for about 30 minutes or until bubbly.
  9. Serve with shredded lettuce and chopped tomatoes.
