I love quick and easy meals and if its a budget friendly meal, even better. Exploring the site will give you some inspiration and ideas for your own $10 meal.</p>
<p>Beginning June 28, 2010, Mission Foods is kicking off the summer with the <a rel="nofollow" href="http://socialspark.com/metrics/click/post?slot_id=350322&amp;url=http%3A%2F%2Fbit.ly%2Fc1cG2C">Mission Menus Challenge</a>. Mission Foods along with Chef Sara Moulton are encouraging you to submit your budget-friendly recipe for a chance to complete in a cook-off in Los Angeles and win a $10,000 dream kitchen makeover as well as weekly prizes. $10,000 for a dream kitchen sounds pretty dreamy to me. Submit your original Mission Flour Tortilla recipe which would feed a family of 5 for $10 or less by August 9, 2010 to be eligible!</p>
<p>Mission Flour Tortillas are available in 3 sizes: small (6&#8243;), medium (8&#8243;), and large (10&#8243;) and are sold in major grocery stores around the country. They contain 0 grams of Trans fat per serving and are cholesterol free.  Mission Tortillas are a kid favorite in our household and there are so many uses for tortillas!</p>
<p>My favorite way to use Mission Flour Tortillas is quesadillas. Quesadillas are so versatile and can be adjusted for each household member&#8217;s specific preferences. You know in a family of six, everyone has their own taste preferences. Some want it meaty, some don&#8217;t. Others want to exclude the onions and peppers, others love them. Many just like cheese quesadillas.</p>
<p>Are you up to the challenge? Here&#8217;s a little recipe I created with ingredients I already had on hand.</p>
<h3>::Black Bean &amp; Peppers Quesadillas</h3>
<p><em>Ingredients</em></p>
<ul>
<li>Olive Oil</li>
<li>Orange, Red, Yellow Pepper Mix</li>
<li>Yellow Onion</li>
<li>Chopped Cherry Tomatoes</li>
<li>Salsa</li>
<li>Mexican Cheese</li>
<li>Black Beans, drained and rinsed</li>
<li>Mission Flour Tortillas</li>
</ul>
<p id="firstHeading">First I start out by sautéing chopped peppers and onions in a small amount of olive oil. I used orange, red, and yellow peppers, which are my favorite.</p>

<p>Add the pepper/onion mix, chopped cherry tomatoes, and Mexican cheese to your Mission Flour Tortilla.</p>

<p>Add the black beans and a small amount of salsa.</p>

<p>Fire up the Panini maker. You can also just cook in a pan obviously. I love my little sandwich maker for projects like this because it flattens it, which helps to keep all the goodies inside the tortilla.</p>

<p><span style="text-decoration: underline;"><strong>Spaghetti Pie<br />
</strong></span></p>
<ul>
<li>4 oz. uncooked spaghetti (.50)</li>
<li>1 lb ground beef ($1)</li>
<li>1 clove minced garlic (.10)</li>
<li>16 oz. jar pasta sauce ($1)</li>
<li>1 egg beaten (.25)</li>
<li>1/4 cup parmesan cheese ($1)</li>
<li>8 oz cottage cheese ($1)</li>
<li>4 oz. mozzarella cheese ($1)</li>
</ul>
<p>Cook Spaghetti according to directions. Combine spaghetti, egg, and parmesan and form into a pie dish like you would a crust. Cook ground beef &amp; minced garlic until brown. Drain. Stir in pasta sauce and heat.</p>
<p>Layer cottage cheese on the spaghetti crust. Spread meat mixture and top with mozzarella cheese. Bake at 350 degrees for 20 minutes or until bubbly.</p>

<ul>
<li>4 boneless pork chops ($4)</li>
<li>Season Salt (.50)</li>
<li>1 Package Corn Bread Stuffing Mix ($1 &#8211; purchased at Aldi!)</li>
</ul>
<p>Grease 9 x 11 pan. Place Stuffing Mix and directed water &amp; butter in pan. Place pork chops on top and season with seasoned salt. Cook for around 30 minutes at 375 degrees.</p>

<p>I&#8217;m gone this week but one of my reader&#8217;s, <a href="http://twoofakindworkingonafullhouse.blogspot.com/" target="_blank">Dee</a>,  contacted me with this recipe and it works perfectly for my weekly Meals Under $10&#8230;.looks like a yummy one and I can&#8217;t wait to try it out!</p>
<p><span style="text-decoration: underline;"><strong>Corn/Potato Chowder</strong></span></p>
<p>Throw into the crockpot (he he, I love it when I can throw my food!)</p>
<ul>
<li>4 large potatoes cut into 1/2 inch bits ($2)</li>
<li>2 cans chicken broth ($1)</li>
<li>1 bag of corn (I used our corn from the field if not $1)</li>
<li>salt and pepper to taste</li>
<li>about 1/2 cup whipping cream ($1)</li>
<li>some bacon bits ($1)</li>
<li>cheese if you want.. ($1)</li>
</ul>
<p>Throw (again, I love this part!!!!) the potatoes, chicken broth, corn, and salt and pepper into crockpot on high for about 7-8 hours.  Stir in whipping cream and let sit for another 30 minutes.  Top with bacon bits and cheese if you want. <em>(You can also add a dollop of sour cream for extra tastiness!)</em></p>

<li>Salsa (Free &#8211; made it my garden!) or diced tomatoes</li>
<li>Lettuce ($1)</li>
<li>Sour Cream ($1)</li>
<li>Shredded Cheese ($2)</li>
<li>Tortillas ($1)</li>
</ul>
<p>Reheat and shred pork. Combine the ingredients you want into a wrap. Done.</p>

<li>I Package of Cream Cheese ($1)</li>
<li>2 Tablespoons of Butter (.50)</li>
<li>Salt &amp; Pepper to Taste (.10)</li>
</ul>
<p>Throw it all in the crockpot and cook for 3-4 hours on high or 5-6 hours on low. After about 30-45 minutes, you will want to stir the cream cheese in the recipe! Top with bread crumbs, corn flakes if you want to make it a little crunch.</p>
<p>If you are a meat eater, you could add chicken to this recipe to make a complete meal.</p>

<p>Here&#8217;s a recipe that is a family fav! $7.75 for 4 servings! I usually double this but don&#8217;t add as much chicken. I don&#8217;t have the exact measurement but it is usually just a $4 package of chicken that I picked up on sale. It still ends up being less than $10 for us. (My prices are based on the awesome rock bottom deals I get!)</p>
<p><span style="text-decoration: underline;"><strong>Yummy! Chicken Casserole</strong></span></p>
<ul>
<li>2 lbs of chopped cooked chicken ($4)</li>
<li> 1 &#8211; 10 3/4 oz. can of cream of chicken or cream of mushroom (.50)</li>
<li> 1  8 oz. carton of sour cream ($1)</li>
<li> 1 tablespoon poppy seeds ($1)</li>
<li> 1 1/2 cups of crushed round buttery crackers ($1)</li>
<li> 1/4 cup butter or margarine melted (.25)</li>
</ul>
<p>Combine first 4 ingredients; spoon into greased baking dish. Combine crushed crackers and butter; sprinkle over chicken mixture. Bake, uncovered, at 350 degrees for 30 minutes.</p>
<p>Add frozen corn or peas to make it veggilious! Bake some Pillsbury Grands Dinner Rolls ($1 on sale &amp; after coupons!) along with it.</p>
<p>I made this Monday night and I thought I had all the ingredients. However, I didn&#8217;t have any poppy seeds and only had about 4 oz. of sour cream and no buttery crackers. Who doesn&#8217;t have Ritz crackers in their house? Me, apparently. So I just added all the sour cream I had and used Pepperidge Farm Bread Crumbs &amp; poured a can of chicken broth over the top. A 9 x 11 pan was over 3/4 gone when I got home so apparently they loved it!</p>
<p>My Aunt Jane emailed me gave this AWESOME suggestion. I&#8217;m going to try this next time! (Plus, egg noodles are on sale this week at Meijer for $1.19 for a 16 oz. bag!)</p>
<blockquote><p>One thing I do to stretch  it is to cook a bag of noodles and put them on the base of your baking dish (be sure to spray the pan) it also fills everyone up faster and they stay that way longer !!!!!!</p></blockquote>

My mother in law gave me the recipe for this years ago and every time I&#8217;ve cooked it, people have enjoyed it. I made this as dinner the other night. You know, the whole breakfast for dinner gig. This is great meal you can cook under $10 for a family of 6. (We even had some leftovers.) If you shop Bargain Briana style (coupons &amp; sales), it should total around $8.18 or LESS (I usually can find cheaper prices on cheese but lately it has been hard too!), which works out for us to $1.36/person for my family. I&#8217;m including my sides &amp; OJ in this cost.</p>
<p><span style="text-decoration: underline;"><strong>Ingredients:</strong></span><br />
1 lb of Sausage ($1.50)<br />
6 eggs (.50)<br />
3½  cups of milk (.88)<br />
1 tsp. Dry mustard (.05)<br />
1 tsp. Salt (0)<br />
¾ Loaf of Bread (.75) (I used 5 grain wheat bread &#8211; ha, the kids never knew!)<br />
8 oz. American Cheese Slices ($2.50)</p>
<p><span style="text-decoration: underline;"><strong>Sides:</strong></span> <em>Betty Crocker Skillet Hash browns ($1)<br />
Orange Juice made from concentrate ($1)</em></p>
<p>Cook Sausage thoroughly and drain. In a separate dish mix together the eggs, milk, dry mustard, and salt. Spray 9 ½ x 11 dish with Cooking Spray. Line the bottom of the pan with the bread. Cover the bread with half of the sausage. Cover with Cheese Slices. Dump ½ of the egg mix on the layers. Try to cover it evenly. Repeat. Cover and store in refrigerator overnight. (This is to help it soak into the bread, I guess. You can omit this if you are in a hurry, it still taste good either way.)</p>
<p>Cook at 325 covered for 45 minutes. Uncover and cook an additional 10 minutes.</p>
<p><em>(Some good substitutions would be bacon or ham, sharp cheddar cheese, shredded Mexican cheese with a little bit of salsa instead of the dry mustard. So many possibilities.) You can also increase the Sausage to 2 lbs as the original recipe called for. </em></p>
