As part of the 2013 goals and resolutions, I’m working on cooking with ingredients we already have on hand in our pantry and freezer. However, instead of telling you what we are going to eat for the week, I’m going to tell you what I cooked last week. Otherwise, it’s just a little much when people we personally know tell the kids what we are having for dinner and it’s too much pressure to stick to that schedule!
This week was a little disorganized. We had quite a bit of stuff going on but we still managed to eat at home most of our meals even if it was “free for all” type of meal nights!
I made a run to the grocery store on Wednesday to prepare for some freezer cooking on Friday using the Not Your Mother’s Freezer Cookbook and a couple of potato recipes from the Fix, Freeze, Feast cookbook. I’ll post more about those experiences soon! We now have several great recipes in the freezer ready to go, which will save time for these busy weeks ahead. Of course, this morning, I forgot to put a freezer meal in the fridge for dinner tonight so I will be cooking tonight, which actually works out well since it’s our only free evening this week!
Here’s our meal plan from the last couple of weeks using items from our pantry:
Breakfast & Snacks:
- Oatmeal, cereal, scrambled eggs, bacon, eggs in “biscuit” (basically egg in bread – lol but the kids love it!), Cake Batter Rice Krispies (eaten in about 10 minutes!), Shamrock Milkshakes
- Frozen pizza, chicken sandwiches, Baked Potato Chowder (adapted from Fix, Freeze, Feast cookbook), leftover spinach roll ups, honey chipotle salmon (ALDI), and Orange Glaze Temph, wild rice & vegetable mixture
