Meal Plan Monday 3/25/2013


As part of the 2013 goals and resolutions, I’m working on cooking with ingredients we already have on hand in our pantry and freezer.  However, instead of telling you what we are going to eat for the week, I’m going to tell you what I cooked last week. Otherwise, it’s just a little much when people we personally know tell the kids what we are having for dinner and it’s too much pressure to stick to that schedule!

Here’s our meal plan from the last couple of weeks using items from our pantry:

Monday: Homemade Mac & Cheese; Homemade Bread

Tuesday: Take-Out (caved again!) What is about Tuesdays? Oh, yeah, it’s a night we have a thousand things going on! (Need to plan better for Tuesdays!)

Wednesday:  Pecan Crusted Chicken Tenders (Freezer Meal) + Garlic Mashed Potatoes (Freezer Meal) ALDI has Potatoes on sale this week so it might be a good week to do this freezer side dish again! The pecan crusted chicken tenders are such a hit at our house! The kids said they would love to have them at least weekly BUT they don’t know they have pecans in them! :) I’m out of this freezer meal at the moment but once I get my Zaycon chicken order in April, I’ll be doing this recipe again!

Thursday: Baked Shrimp, french fries, and ravioli

Friday: Family Mexican Dinner Night (was too annoyed to cook – haha!) Totally regretted this after our bill was almost more than our weekly grocery bill – ack! 

Saturday: Kids Freezer Pizza; Parents at Murder Mystery Dinner

Sunday: Ratouille (Freezer Meal) with left over rice

Breakfasts: Cinnamon Banana Bread (from Freezer Cooking), Oatmeal, Cereal, Eggs (thanks Aunt Jane for the Farm Fresh Eggs!)
