Meals Under $10 11/11

Spaghetti Pie

  • 4 oz. uncooked spaghetti (.50)
  • 1 lb ground beef ($1)
  • 1 clove minced garlic (.10)
  • 16 oz. jar pasta sauce ($1)
  • 1 egg beaten (.25)
  • 1/4 cup parmesan cheese ($1)
  • 8 oz cottage cheese ($1)
  • 4 oz. mozzarella cheese ($1)

Cook Spaghetti according to directions. Combine spaghetti, egg, and parmesan and form into a pie dish like you would a crust. Cook ground beef & minced garlic until brown. Drain. Stir in pasta sauce and heat.

Layer cottage cheese on the spaghetti crust. Spread meat mixture and top with mozzarella cheese. Bake at 350 degrees for 20 minutes or until bubbly.

Add a salad and garlic bread for a meal under $10!

Meals Under $10 11/4

I cooked this last night and it was a hit! If you have a bigger family, you will probably want to use more pork chops. I didn’t eat dinner last night so 4 boneless chops were enough for 5. Add a dinner salad or a veggie for a quick and easy meal under $10!

Boneless Pork Chops with Stuffing

  • 4 boneless pork chops ($4)
  • Season Salt (.50)
  • 1 Package Corn Bread Stuffing Mix ($1 – purchased at Aldi!)

Grease 9 x 11 pan. Place Stuffing Mix and directed water & butter in pan. Place pork chops on top and season with seasoned salt. Cook for around 30 minutes at 375 degrees.

Meals Under $10 – Tuesday 10/28

This is an EASY and CHEAP Turkey Manhattan Recipe.

(2) cans of Gravy @ $1 (can usually find on sale for this or cheaper!)
1/2 lb of Deli Turkey @ $2.48
1/2 loaf of bread (.49)

Total: $4.97

Warm the Gravy in a sauce pan. Add turkey. Serve warm over slices of bread. Great fall/winter recipe.

Tuesday Meals Under $10 October 21st Edition

I’m gone this week but one of my reader’s, Dee, contacted me with this recipe and it works perfectly for my weekly Meals Under $10….looks like a yummy one and I can’t wait to try it out!

Corn/Potato Chowder

Throw into the crockpot (he he, I love it when I can throw my food!)

  • 4 large potatoes cut into 1/2 inch bits ($2)
  • 2 cans chicken broth ($1)
  • 1 bag of corn (I used our corn from the field if not $1)
  • salt and pepper to taste
  • about 1/2 cup whipping cream ($1)
  • some bacon bits ($1)
  • cheese if you want.. ($1)

Throw (again, I love this part!!!!) the potatoes, chicken broth, corn, and salt and pepper into crockpot on high for about 7-8 hours. Stir in whipping cream and let sit for another 30 minutes. Top with bacon bits and cheese if you want. (You can also add a dollop of sour cream for extra tastiness!)

Tuesday Meals Under $10 October 14th Edition

Since I know we always have leftovers after making a nice size pork tenderloin, I’m going to shred that meat and make tenderloin wraps. (I always tell the kids pork is chicken. For some reasons that sounds better to them than pork. Don’t know why?)

Leftover Pork Tenderloin Wraps

  • Leftover Tenderloin (cooked anyway) ($5)
  • Salsa (Free – made it my garden!) or diced tomatoes
  • Lettuce ($1)
  • Sour Cream ($1)
  • Shredded Cheese ($2)
  • Tortillas ($1)

Reheat and shred pork. Combine the ingredients you want into a wrap. Done.

Crock Pot Creamy Corn

Slow Cooker Creamy Corn

Prep Time: 10 minutes

Cook Time: 4 hours

Total Time: 4 hours, 10 minutes

If you are a meat eater, you could add chicken to this recipe to make a complete meal.

Ingredients

  • 1 Frozen Package of Corn (for me free since I used Grandpa’s corn we froze!)
  • I Package of Cream Cheese
  • 2 Tablespoons of Butter
  • Salt & Pepper to Taste

Instructions

  1. Throw it all in the crockpot and cook for 3-4 hours on high or 5-6 hours on low.
  2. After about 30-45 minutes, you will want to stir the cream cheese in the recipe!
  3. Top with bread crumbs, corn flakes if you want to make it a little crunch.

Meals Under $10 – September 30th Edition

Here’s a recipe that is a family fav! $7.75 for 4 servings! I usually double this but don’t add as much chicken. I don’t have the exact measurement but it is usually just a $4 package of chicken that I picked up on sale. It still ends up being less than $10 for us. (My prices are based on the awesome rock bottom deals I get!)

Yummy! Chicken Casserole

  • 2 lbs of chopped cooked chicken ($4)
  • 1 – 10 3/4 oz. can of cream of chicken or cream of mushroom (.50)
  • 1 8 oz. carton of sour cream ($1)
  • 1 tablespoon poppy seeds ($1)
  • 1 1/2 cups of crushed round buttery crackers ($1)
  • 1/4 cup butter or margarine melted (.25)

Combine first 4 ingredients; spoon into greased baking dish. Combine crushed crackers and butter; sprinkle over chicken mixture. Bake, uncovered, at 350 degrees for 30 minutes.

Add frozen corn or peas to make it veggilious! Bake some Pillsbury Grands Dinner Rolls ($1 on sale & after coupons!) along with it.

I made this Monday night and I thought I had all the ingredients. However, I didn’t have any poppy seeds and only had about 4 oz. of sour cream and no buttery crackers. Who doesn’t have Ritz crackers in their house? Me, apparently. So I just added all the sour cream I had and used Pepperidge Farm Bread Crumbs & poured a can of chicken broth over the top. A 9 x 11 pan was over 3/4 gone when I got home so apparently they loved it!

My Aunt Jane emailed me gave this AWESOME suggestion. I’m going to try this next time! (Plus, egg noodles are on sale this week at Meijer for $1.19 for a 16 oz. bag!)

One thing I do to stretch it is to cook a bag of noodles and put them on the base of your baking dish (be sure to spray the pan) it also fills everyone up faster and they stay that way longer !!!!!!
