A very good blogging friend, Erin Chase (5dollardinners.com), has recently released a cookbook The $5 Dinner Mom Cookbook. Erin and I started our blogs around the same time in 2008 and she was one of my first guest posts. It is so exciting to see a friend succeed! I knew the concept of a $5 Dinner would really catch on!

The $5 Dinner Mom Cookbook like her website is focused on meals which are easy on the budget, $5 or less. Now, the $5 part will depend on the area of the country and the size of your family but the concept is really to help you save money while still eating healthy!

The book has a variety of recipes in it including a whole section for vegetarian meals, which are of course affordable. With some of the recipes, you can really taste the influence of Erin’s time in the Dominican Republic.

Not only does this book give you recipes but it also includes a great section on how to budget and meal plan. I’m really proud of Erin’s success with this book and can’t wait to see what she comes up with next. You will want to find out when she’s coming to your town for a book signing, too!

One of my family’s favorite inexpensive dinners is baked beans and browned ground beef (add 3 Tbsp brown sugar and 3 Tbsp catsup). I can’t wait to win this great cookbook.

Our favorite cheap meal is steak tacos. I buy the meat already chopped into pieces. Husbands seasons and cookd it. Eat with corn tortillas and shredded cheese. Real easy.

I can eat chicken curry and rice for every meal … so I usually make a batch of it on the weekend and enjoy a good meal every night. Here goes …

Ingredients

Chicken breasts for boneless curry. Or use drumsticks etc.
2-3
Onions, finely chopped
2-3
Tomatoes pureed
4-5
Hot Peppers
4-5 tbsp
Oil
Whole spices
1 inch Cinnamon stick, 4-5 Cloves, 4-5 green cardamom, Black pepper, Coriander seeds, 1-2 Bay Leaf, cumin seeds
Pastes
1 tbsp Ginger/Garlic paste
Powdered spices
Tumeric, coriander, red chilli powder, Garam Masala,
paparika

Directions
1. Marinate chicken (for hour or so) in paste of yogurt, red chilli powder, lemon juice
2. Heat oil in a thick bottomed pan. Add whole spices. Let the cumin seeds pop. Saute onions till golden brown. Add ginger, garlic, pepper and continue to cook and stir constantly.
3. Add powdered spices except garam masala. Mix well.
4. Add pureed tomatoes. Cook till oil separates from the “masala”. Add chicken pieces and cook on high flame for 5 min.
5. Add ~2 cups water, bring to boil, cover and cook till chicken is cooked.
6. Sprinkle garam masala, chopped cilantro and salt to taste. Cook few minutes. Serve Hot.
Tip: Add yogurt/sour cream/cashewnut paste to thicken the curry

My favorite bargain meal is home-made soup. When you have a rotisserie chicken, save the carcass and freeze, if necessary. When you’re ready to make soup, boil the bones in your largest soup pot with lots of water. Remove the bones and pick off the remaining bits of meat. Add them to the soup. Add fresh veggies of your choice (onion, celery, etc), bits of leftover veggies that have been languishing in your fridge, leftover rice, plain noodles, etc. Cook your soup at a simmer on the stove top. Season to taste and serve! You can freeze remaining soup for a cheap and easy meal at a later date!

My favorite bargain recipe is my shrimp dish… no, I don’t have a name for it….
I start with shrimp, obviously, and cook them in a pan with garlic, olive oil and italian seasonings. When the shrimp are done, I throw them on some french bread (cut lengthwise) and pop them in the oven covered in parmesean cheese! Yum! We usually have a salad with this, and it is super easy and quick!

My fav recipe is to take chicken breast and cook it in the crockpot with BBQ sauce all day, then we serve with buns and any quick sides I have in stock such as corn, hash browns, applesauce, etc.

Chicken One Dish….Boneless/skinless chicken breasts as many as you like, one can cream of chicken soup and 8 oz sour cream. Mix soup and sour cream together and pour into 9×13 lay chicken breast in mixture and cover with Foil bake at 375 till juices run clear and serve over rice. I always use more sour cream and more soup because we like ours with more sauce.

Ground beef tends to make many inexpensive, fast & wholesome meals in our home. Spaghetti, tacos, meatloaf, nachos, 15 bean stew & enchiladas to name a few. I have taken leftover meatloaf, crumbled it & put it into a layered enchilada casserole. Add it to mac n cheese. I have even make egg rolls using ground beef will lots of fresh veggies. My favorite budget recipe is fried rice. I’ll add whatever meat we have leftover, some peas and carrots pieces from the freezer, and an onion (or even just onion powder) and stir fry it with some soy sauce. Always yummy!

Favorite bargain recipe is
CROCK POT PIZZA (YUM)
2 c. macaroni, cooked
1 lb. browned hamburger
1 (15 oz.) can pizza sauce
1 (15 oz.) can tomato sauce
1 sm. pkg. pepperoni slices
1/2 lb. Mozzarella cheese, shredded
Parmesan cheese

Mix all ingredients in crock pot except cheeses and place these on top. Turn on high for 1 1/2 hours.

My favorite meal on the cheap is Potato-Lentil soup with homemade bread. Yummy, good source of healthy complex carbs and protein, and cheap, cheap, cheap. Loaf of bread- 50c, soup-about $2.00 for a big pot. Wow!

My favorite bargain recipe is baked chicken breasts (bought on sale!), stuffed with chive & onion cream cheese, and wrapped in bacon – delicious! I serve it with vegetables or a salad.

My favorite budget meal is a crockpot chicken and dumplings:
1-2 lbs (or 4 chicken breast halves) boneless skinless chicken breasts,
cut into strips or whole
2 tablespoons butter
2 cans condensed cream of chicken soup
1 medium onion finely diced
2 cans refrigerated biscuits, cut into 3rds or quarters
frozen veggies – mixed or peas work well (as much as you want to add)
1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
2. Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the frozen veggies in now and mix and add the biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.
Serves about 8, and if you get the chicken on sale and the rest at Aldi, it should cost about $5!

My favorite bargain recipe is cajun lentil patties. I make them with all pantry foods, so they end up costing pennies per patty. You can also make big batches of them to save in the freezer! I love $5 Dinners, I’m glad to see she has a book. :)

My favorite bargain recipe is chicken chili.
In the crockpot-put some frozen chicken (doesn’t have to be frozen), chicken broth. Once chicken is mostly cooked, add onion. Add 3-4 cans of great northern beans, more chicken broth, cheddar cheese, and a little salsa.
