Ingredients

- 1 package firm tofu, pressed
- 1 Tablespoon coconut oil
- 1 mango, peeled and cubed
- 1 can black beans, drained and rinsed
- 1/4 cup green onions (optional)
- Rice cooked to your own specifications
Instructions
- Warm coconut oil in pan. Cook tofu until slightly brown on each side.
- Add in mango and black beans, cook for 2-3 more minutes until mango is soft.
- Top with green onions.
- Serve with steamed broccoli and rice.
