Easy Pressure Cooker Beef Carnitas Recipe

Here’s a simple recipe for beef carnitas that takes just one hour to cook to perfection in your pressure cooker. The beef carnitas are flavorful with a warm smoky flavor that has a authentic taste  with just five simple yet powerful ingredients. Normally, I use my slow cooker for this recipe but this time around, I decided to mix it up with my pressure cooker to see if the meat would really taste as delicious as the fall off the bone taste when using the slow cooker.  I’m happy to say this recipe and method was a complete success. I will be using my pressure cooker more often in the future.

I enjoy cooking foods for my family that they will enjoy that are also simple and easy.  Less ingredients usually means less prep time, which means I can get back to enjoying time with my family while dinner is cooking. Dump and go recipes are the best way for me to cook a meal because sometimes I get sidetracked and forget I am cooking dinner – oops burnt dinner tonight kiddos! Then there is the slow cooker method, which requires planning and prep ahead, which again is something that can easily be forgotten. Hence, why I am loving the pressure cooker.

Using chuck roast, garlic cloves, salt, dark beer, and one key “secret” ingredient of chipotle peppers in adobe sauce, this carnitas recipe is mouthwatering.

The secret ingredient in these delicious and flavorful carnitas are the chopped LA MORENA® Chipotle Peppers, which give the carnitas the smoky and savory flavor.

The chipotle is red jalpeño chile that is ripened, dried, and smoked through a special process which gives the LA MORENA® Chipotle Peppers a unique war heat and smoky flavor.  It is perfect to use in soups, sauces, and seasoning for meats, chicken, and fish.

Ingredients
  • 2-3 lb chuck roast
  • 5 garlic cloves
  • 1 teaspoon salt
  • 4-6 ounces dark beer
  • 4 LA MORENA® Chipotle Peppers in Adobo sauce, chopped
Instructions
Pressure cooker method
  1. Brown chuck roast on both sides using the brown setting on your pressure cooker.
  2. Add garlic, salt, beer, and chipotle peppers.
  3. Add additional water if it doesn't cover the meat.
  4. Cook on the meat setting for one hour.
  5. Enjoy!

    I cooked this tonight and it would be really helpful to know how to best use the juice that is left when you finish. Also some direction on what to inculde in the wraps you might make with this meat would be terrific.

    The brand of Chipolate in Adobe I happened to have on hand and I believe they are good value for money. Some ideas of how to serve this meat would make this recipe so much more enjoyable.
