For Salmon Cakes
  • 2 pounds salmon fillet, skinless
  • 2 teaspoons blackened seasoning
  • salt and pepper
  • 1 cup plain breadcrumbs
  • ⅓ cup fresh parsley, chopped
  • ¼ cup mayonnaise, light
  • ¼ cup Dijon mustard
  • 2 large eggs
  • 2 tablespoons lemon juice, fresh
For Lemon-Herb Sauce
  • ½ cup mayonnaise, light
  • 4 ounces cream cheese, light
  • 2 tablespoons lemon juice, fresh
  • 2 tablespoons chopped dill, fresh
  • salt and pepper
For Salmon Cakes
  1. Preheat oven to 400 degrees. Season salmon with blackened seasoning, salt, and pepper.
  2. Cook for 15 - 20 minutes. Let cool for about 10 minutes. Use a fork to break the salmon into smaller pieces.
  3. In a large bowl, combine breadcrumbs, parsley, mayonnaise, mustard, eggs, lemon juice, and salmon.
  4. Form into 8 patties. Refrigerate for 30 minutes.
  5. Heat broiler. Broil patties on high for 8 minutes or until slightly golden. Do not turn.
For Lemon-Herb Sauce
  1. In a small saucepan, combine mayonnaise, cream cheese, lemon juice, and fresh dill. Season with salt and pepper. Cook on low until well combine. Refrigerate until ready to serve.
