Coconut Mango Tofu w/Black Beans & Rice
  • 1 package firm tofu, pressed
  • 1 Tablespoon coconut oil
  • 1 mango, peeled and cubed
  • 1 can black beans, drained and rinsed
  • ¼ cup green onions (optional)
  • Rice cooked to your own specifications
  1. Warm coconut oil in pan. Cook tofu until slightly brown on each side.
  2. Add in mango and black beans, cook for 2-3 more minutes until mango is soft.
  3. Top with green onions.
  4. Serve with steamed broccoli and rice.
