- 1 stick of butter, softened
- 3 eggs
- 1 1/2 cup brown sugar
- 1 1/2 cup pumpkin puree
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon pumpkin pie spice
- 1 teaspoon cinnamon
- 2 cups flour
- 2/3 cup milk
Instructions
- Preheat oven to 350 degrees.
- In a large bowl or a stand mixer, beat together the butter, eggs, and brown sugar until creamy.
- Add pumpkin puree, baking powder, salt, vanilla, pumpkin pie spice, cinnamon, and flour until mixed well. Then add milk until well mixed.
- Spoon into muffin tins lined with cupcake wrappers.
- Bake for 15- 18 minutes.
