Frosted Cinnamon Zucchini Bars

  • 3/4 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 2 cups shredded zucchini
  • 1 cup flaked coconut
  • 3/4 cup chopped walnuts
  • 2 cups confectioner’s sugar
  • 1 tsp ground cinnamon
  • 2 tbsp butter, melted
  • 1 tsp vanilla
  • 23 tbsp milk

Instructions

For the Bars:

  1. In a large mixing bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition.
  2. Beat in vanilla.
  3. Combine flour and baking powder, gradually add to the creamed mixture. Stir in zucchini, coconut, and nuts.
  4. Spread into a greased 15 in. x 10 in. x 1 in. baking pan.
  5. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  6. Cool on a wire rack.

For the Frosting:

  1. Combine confectioner’s sugar and cinnamon into a bowl. Stir in the butter, vanilla, and enough milk to achieve a spreading consistency.
  2. Frost bars after completely cool.
