I don’t know about your kids, but my kids love bananas. And they aren’t the only ones either. I love not only how yummy and good for you bananas are, but also how easy of a snack they are. All you have to do is grab one, peel it, and it’s ready to eat. For these reasons and others, I usually keep plenty of bananas on hand.
Of course, the problem with always having bananas on hand is that if you don’t eat them all in time, they start to turn brown and gross. No one wants to eat a banana that’s starting to turn brown. Unless you’re making this Easy Banana Bread recipe, that is. Then, they’re the star of the show!

This isn’t the only recipe for banana bread I’ve ever tried, but it is one of my favorites. It’s easy to make, it contains only ingredients I usually have on hand, and of course the banana bread always turns out moist and delicious! It’s perfect for those mornings when you know you’re going to be in a hurry; you can just grab it and go. (After you smear a bunch of butter on it, because… yum!)

Ingredients
- 4 ripe Bananas
- 1 cup Sugar
- 2 Eggs
- , beaten
- 1 tsp Vanilla
- 1/2 c. vegetable oil
- 2 c. flour (1 c. can be whole wheat)
- 1 tsp. baking soda
- 1/2 tsp. salt
Instructions
- Preheat oven to 350.
- Grease inside of a loaf pan with shortening.
- In a large bowl, mash bananas.
- Beat eggs and add to bowl.
- Add sugar and oil and mixing well.
- Whisk together dry ingredients and add to banana mixture.
- Mix well and pour into prepared pan.
- Bake 50-60 minutes or until toothpick inserted in center comes out clean.
