Spicy Sofritas Recipe – Perfect for Game Day Taco Bars!

Beside a big screen television, the only other three things you need for your big game parties are a cold beverage,  food, and a delicious dessert. Throwing a fantastic party doesn’t have to break the bank and as long as you are in good company while your team is winning, the party is sure to be a success. We definitely can’t guarantee a win for your favorite team but we can help you out with some great ideas for food and beverages that are sure to be a winner at your game day party.

On my latest Walmart shopping trip, I came across these Old El Paso™ Stand N’ Stuff soft flour tortillas, which looked like a fun way to make your own homemade taco bowls. Tacos are always a crowd pleaser because they can be customized to each person’s own taste and preferences. It is easy and inexpensive to make a taco bar with all the fixings like meat, rice, cheese, sour cream, hot sauces, onions, tomatoes, and more.

Old El Paso Taco Boats

If you want to add a little more spice to your taco bar, try these vegetarian sofritas, which will be popular even among your meat eaters. Here’s what you will need:

Sofritas Ingredients

Ingredients: 

  • 1 Poblano Pepper, roasted, seeds and skins removed
  • 2 Chipotles in Adobo sauce
  • 1 Tablespoon cumin
  • 2 teaspoon oregano
  • 1 teaspoon salt
  • 3 Tablespoon lemon juice
  • 1 Tablespoon sugar
  • 2 Tablespoon tomato paste
  • 1 teaspoon minced garlic
  • 2 (10 ounce) packages super firm tofu, excess water removed
  • Olive Oil
  • 2 cups water

Drain excess water off tofu.
Heat skillet with olive oil. Cook each piece of tofu for 3-4 minutes over medium heat on each side.

Step 1
Use a paper towel to remove excess oil.
Combine poblano pepper, chipotles, cumin, oregano, salt, tomato paste, olive oil, lemon juice, sugar, and 1/4 cup water. Blend in a food processor or blender until pureed.

Step 2
Add sauce to large saucepan. Cook on medium for 2-3 minutes.

Step 3
Add tofu to pan and cook for a few minutes until well coated with sauce.

Step 4
Stir in remaining water and bring to a boil. Reduce heat and cook until the sauce is thickened.

Step 6

Serve with rice and your favorite Budweiser® product. The perfect pairing for a taco bar on game day is a bottle of Michelob Ultra Lime Cactus. The perfect flavorings to pair with your sofritas on game day.

    I love those tortilla bowls/taco boats. Great Superbowl menu ideas. Those tacos, with the heat turned down, will be great to use for kids parties, too. Kids always seem to love the “build your own” menus best.
