I’m gone this week but one of my reader’s, Dee, contacted me with this recipe and it works perfectly for my weekly Meals Under $10….looks like a yummy one and I can’t wait to try it out!
Corn/Potato Chowder
Throw into the crockpot (he he, I love it when I can throw my food!)
- 4 large potatoes cut into 1/2 inch bits ($2)
- 2 cans chicken broth ($1)
- 1 bag of corn (I used our corn from the field if not $1)
- salt and pepper to taste
- about 1/2 cup whipping cream ($1)
- some bacon bits ($1)
- cheese if you want.. ($1)
Throw (again, I love this part!!!!) the potatoes, chicken broth, corn, and salt and pepper into crockpot on high for about 7-8 hours. Stir in whipping cream and let sit for another 30 minutes. Top with bacon bits and cheese if you want. (You can also add a dollop of sour cream for extra tastiness!)
