If you are looking for a easy summer dessert that is sure to please, this Cookie Sandwich Icebox Cake is a perfect. It only requires three ingredients and is a breeze to assemble. This icebox cake recipe is one that you will be asked over and over again to make!
Ingredients
- 90 chocolate cookie sandwiches (about 3 packages)
- 3 tubs of whipped topping
- 1 1/2 cups International Delight® Cold Stone Creamery™ Sweet Cream creamer
- chocolate sauce & cherries, optional
The recipe I am going to share with you make a 9 1/2″ x 13″ pan. This is a great size if you are making for a large group. Scale down if you need to make it for a smaller group. Personally, I make the large size and keep in our freezer and cut pieces out as needed for a delicious treat.
This is made even better with Cold Stone Creamery™ Sweet Cream creamer. It is a very rich cream that is great for an indulgence like this recipe. It is a perfect pairing with whipped cream and cookie sandwiches!
Dip one package of cookies in the creamer one by one. Lay flat in a 9″ x 13″ dish.
Spread one tub of whipped topping over the cookies.
Repeat this two more times. Finish with a layer of whipped topping. Crumble any extra cookies and sprinkle on top. Drizzle with chocolate sauce and garnish with cherries if desired.
Cover and place in freezer for 4 – 6 hours. I personally allow it to freeze overnight.
What you have is a delicious cold treat with chocolate cookie sandwiches dipped in a delicious creamy creamer with whipped topping!
