Extra Zucchini in your garden? Want a new idea? Try Baked Zucchini Chips which are surprisingly delicious and better for you than the store bought chips. All you need is zucchini, oil, and salt. Super simple!
Slice your zucchini very thin.
Then layer on a baking sheet lined with parchment paper or a silicone baking mat. Pat with a paper towel to remove some of the excess water from the zucchini. Spray with olive oil. I used my Misto. Then sprinkle with salt.
Cook at 225 degrees for 45 minutes. Turn. Cook for additional 45 minutes or until crispy!
