Soups are great for the colder months. They are a staple in our household during the winter. This Broccoli Cheddar Soup recipe is one of our family’s favorites. It is an easy and delicious recipe that is enough for a main meal or paired with a sandwich or soup. It is thick and rich made with fresh broccoli. Of course, add in plenty of delicious cheddar cheese. This is a soup you will be hoping there is leftover for lunch the next day but you will most likely be disappointed as it will be popular!
Not only is this a easy and delicious soup recipe but you can purchase all the ingredients at your local Aldi store. {Read why I love Aldi here.} This also makes it a very budget friendly recipe. To keep the recipe vegetarian, we use vegetable broth but you can easily switch out for chicken broth to give it a different flavor. You can also substitute the fresh broccoli for frozen broccoli. I keep almost all the other ingredients on hand so having frozen broccoli in the freezer makes it easy to make when I don’t feel like heading to the grocery store for fresh produce.
In a large saucepan, heat butter until melted. Stir in flour, salt, pepper, and onion powder until smooth. Add in milk and broth. Cook at medium-low temperature until mixture is thickened.
Add broccoli. Cook until broccoli is to your desired softness. Some people like to cook the broccoli ahead of time. This just adds more dishes to clean so I skip that step and do it all in one pot. I simmer for 10-15 minutes after adding broccoli.
Remove from heat. Stir in cheese until melted.

- 3/4 cup butter
- 3/4 cup all purpose flour

- 3 cups broth (I use vegetable)
- 4 1/2 cups of milk (I used skim)
- 3 cups broccoli, chopped
- 3/4 cup shredded cheddar cheese (I used sharp cheddar)
