When does pumpkin season end? I hope it never ends. It is my favorite time of the year. I have been having quite a bit of fun with the International Delight Pumpkin Pie Spice coffee creamer I picked up at the store recently.
International Delight Pumpkin Pie Spice coffee creamer is a creamy swirl of seasonal spice with flavors inspired by pumpkin pie. Not only is it great in coffee for those of you who love pumpkin pie spice, it can also be incorporated into recipes to bring a new seasonal dimension to a recipe without much effort.
I recently used International Delight Pumpkin Pie Spice coffee creamer to make delicious pumpkin muffins!
Here is what you will need to make these delicious Pumpkin Muffins:
- 1/2 cup International Delight Pumpkin Pie Spice coffee creamer
- 1 cup pure pumpkin, canned
- 1½ cups all purpose flower
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoon pumpkin pie spice
- 3/4 cup light brown sugar
- 1/4 cup pure maple sugar
Instructions:
Preheat oven to 350 degrees. In a large bowl, combine flour, baking powder, baking soda, pumpkin pie spice, and salt until combine. Then add pumpkin, coffee creamer, bown sugar, and maple syrup. Stir until mixed.
Spoon mixture into greased muffins cups about 3/4 full. Bake for 20-25 minutes.
