Be Creative with Leftovers

January 21, 2009 By: Briana Carter2 Comments

fotolia_2867025_xs-300x1991In New Year, New Grocery Budget, I discussed my weekly grocery budget goal of $60/week. One of the the ways I’m going to get there is my getting our youngest child out of diaper, which is coming along nicely. Another was to be creative with our leftovers so food doesn’t go to waste as often. This is still a little bit of a chore as it requires me to be creative, which I am not.

Last week, I made these cute little “muffins” using leftover spaghetti sauce.

Ingredients Used:

Leftover Marina/Meat Sauce
Refrigerated Pizza Dough (Used Pillsbury I purchased on sale for $1)
Shredded Mozzarella Cheese
(1) Egg

Spray Muffin pan with Cooking Spray. Take the pizza dough, flatten out. Cut or tear into squares and place in muffin pan. (It doesn’t have to be pretty just make sure the bottom is cover with dough and you have enough for the top!) Scoop sauce into muffin pan. The Pampered Chef scoop works nicely for this. Top with mozzarella cheese. Close up the “muffin” with the dough. Beat egg. Then dust the top of the “muffins” with the beaten egg.

You could also modify this for other leftovers.  Use your leftover chicken, add a veggie, add some cheese for “Chicken Muffins”. Use leftover taco meat, add cheese & tomatoes for “Taco Muffins.”

These were fun to eat and easy to make. 3 out of 4 kids liked it. 2/2 adults liked it. The one who didn’t like it hates meat sauce for some strange reason. He will eat pizza with meat and tomato sauce but does not like spaghetti sauce with meat. I tried telling him they were “Pizza Muffins” but he didn’t buy that. He put two and two together and figured out it was the leftover sauce from the night before. He ate it but wasn’t happy about it.

Great idea on the “muffins.” I posted on this recently, too: http://www.lifeasmom.com/2009/01/budget-living-what-to-do-with-leftovers.html
