Looking for a hearty, budget-friendly meal that the whole family will love? This Breakfast Casserole is a tried-and-true favorite passed down from my mother-in-law. It’s incredibly easy to prepare and perfect for breakfast, brunch, or even a comforting dinner. The best part? You can make it for under $10, feeding a family of six with leftovers to spare.
Ingredients:
-
1 lb sausage – $1.50
-
6 eggs – $0.50
-
3½ cups milk – $0.88
-
1 tsp dry mustard – $0.05
-
1 tsp salt – $0.00
-
¾ loaf of bread (I used 5-grain wheat) – $0.75
-
8 oz American cheese slices – $2.50
Optional Sides:
-
Betty Crocker Skillet Hash Browns – $1.00
-
Orange Juice (from concentrate) – $1.00
Total Estimated Cost: Approximately $8.18 or less, which breaks down to about $1.36 per person, including sides and orange juice.
Instructions:
-
Cook the sausage thoroughly in a skillet and drain any excess fat.
-
In a separate bowl, whisk together the eggs, milk, dry mustard, and salt.
-
Grease a 9½ x 11-inch baking dish with cooking spray.
-
Layer the bottom of the dish with bread slices.
-
Spread half of the cooked sausage over the bread.
-
Place cheese slices over the sausage layer.
-
Pour half of the egg mixture evenly over the layers.
-
Repeat the layers with the remaining bread, sausage, cheese, and egg mixture.
-
Cover the dish and refrigerate overnight to allow the flavors to meld. (If you’re short on time, you can bake it immediately; it still tastes great!)
-
Preheat the oven to 325°F (163°C).
-
Bake covered for 45 minutes.
-
Uncover and bake for an additional 10 minutes, or until the top is golden and the casserole is set.
Variations:
-
Meat Options: Substitute sausage with bacon or ham for a different flavor profile.
-
Cheese Choices: Try sharp cheddar or a shredded Mexican cheese blend.
-
Flavor Twist: Add a bit of salsa in place of dry mustard for a zesty kick.
-
Hearty Version: Increase the sausage to 2 lbs for a meatier casserole
This casserole is not only delicious but also versatile and economical. It’s a go-to recipe in our household, especially when we want something comforting without spending a lot. Give it a try, and it might become a staple in your home too!
