As some of you know, I gave up meat back in the spring. I haven’t missed it one bit. However, I have had a hard time coming up with recipes that I can adapt for the whole family. The idea for the Sun Dried Bow Ties was something I threw together with items we already had in our pantry and it turned out quite tasty. Usually, my kitchen experiments are not a pleasant one for the family!
The picture shown above was before I decided I needed to finely chop the Sun Dried Tomatoes, which made the flavor more even and it was easier to eat with those chopped up. Of course, I used my Ninja Kitchen to get it finely chopped quickly. I’m loving the Ninja, by the way. I will post later about how I used it to make my first batch of home made black bean burgers.
Onto the recipe, this is one that you can easily adapt for those who eat meat. Just substitute diced chicken for the tofu.
Ingredients:
- 8 oz. package of bow tie pasta, cooked
- 6-8 pieces of sun dried tomatoes, finely chopped
- 8 oz. package of tofu, diced (substitute diced chicken if you prefer)
- 3-4 Tablespoons (basically to taste) Kraft sun dried tomato vinaigrette dressing**
Cook pasta according to directions. Use non stick cooking spray or olive oil to cook tofu or chicken. Add cooked bow tie pasta, sun dried tomatoes, and dressing and cook on medium until warm.
I love the sweet, tangy taste of sun dried tomatoes and this recipe hit the spot with me! You could even top this with an Italian cheese if you want to add a little dairy to your meal.
**In case anyone is wondering, I was not paid or compensated in any way to use Kraft dressing in my recipe. It just happened to be the brand of dressing in my pantry from one of my great couponing finds! You may be able to find a similar one in another brand you prefer!
