Tomato Basil Toast

With school out for summer, it seems that my children quickly get into a food rut. I came up with a weekly plan for my children to try new foods. My oldest daughter enjoys tomato sandwiches, which is simply bread and tomato…she pushes cheese away unless it’s shredded {I don’t know!}. So with her excitement for growing her own food this summer I decided it was a great opportunity to create a lunch for our first Try New Foods experiment.

Eating from your own garden just tastes so much better, doesn’t?!? Chances are if you are growing tomatoes you are growing basil as well…I mean they go hand in hand! So while I’m super excited we have 10 maters growing out back, they simply aren’t ready yet.

However, our basil plant is just CRAZY! I needed to use some Basil for our Try New Foods lunch and wanted to use the ingredients I already had on hand. I had a few tomatoes I picked up from the Farmer’s Market that were needing to be used up and created this delicious recipe! You can easily make this into a grilled cheese as well!

This Tomato Basil Toast makes for a great lunch or appetizer!

*Serves 4

Ingredients

  • 2 Ripe Tomato, sliced 1/8” thick
  • ½ C Basil, thinly sliced into ribbons
  • Olive Oil
  • 1 c Mozzarella Cheese (sliced or shredded, whatever’s on hand!)
  • 4 Slices White Bread
  • Preheat oven to 425

Place 4 slices of white bread in toaster and lightly toast. Once the toast is completed, place the cheese, then tomato and basil last. Once you have your 4 creations place on a baking sheet and lightly drizzle with olive oil. Place in oven for about 10-15 minutes. You are simply wanting to melt the cheese until golden brown.

Serve warm from the oven.
